Potato masher
A potato
masher, bean masher, pea masher or crusher is a food preparation utensil used
to crush soft food for such dishes as mashed potatoes, apple sauce or refried
beans. Potatoes mashed using a potato masher tend to be fluffier and lighter in
texture compared to other methods of mashing, because use of the device reduces
cell damage to the potato, releasing less starch.
Although potato
mashers are most commonly used to mash potatoes, they are also used for mashing
a variety of foods. They are most used in home kitchens, but may also be used
in commercial kitchens. Commercial mashers are often of larger design (up to 32
inches in base width). Other common uses include mashing pumpkins and rutabagas
for soup, making hummus, guacamole, chili, baking mix, egg salad, or even
purées (depending on the fineness of the ridges).
Vacuum Sealer
Vacuum
packing is a method of packaging that removes air from the package
prior to sealing. This method involves (manually or automatically) placing
items in a plastic film package, removing air from inside, and sealing the
package.[1] Shrink film is sometimes used to have a tight
fit to the contents. The intent of vacuum packing is usually to remove oxygen
from the container to extend the shelf life of foods and, with flexible
package forms, to reduce the volume of the contents and package.
Vacuum
packing reduces atmospheric oxygen, limiting the growth of aerobic bacteria or
fungi, and preventing the evaporation of volatile components. It is also
commonly used to store dry foods over a long period of time, such as cereals,
nuts, cured meats, cheese, smoked fish, coffee, and potato chips (crisps). On a
more short term basis, vacuum packing can also be used to store fresh foods,
such as vegetables, meats, and liquids, because it inhibits bacterial growth.
External vacuum sealers involve a
bag being attached to the vacuum-sealing machine externally. The machine will
remove the air and seal the bag, which is all done outside the machine. A heat
sealer is often used to seal the pack.
Fillet Knife
A fillet knife (also called a filleting knife) is a kitchen knife used for filleting. It gives good
control and aids in filleting. It is very flexible boning knives that are used
to filet and prepare fish. They have blades about 15 cm to 28 cm (6 to
11 inches) long, allowing them to move easily along the backbone and under
the skin of meat.
