Pastry Wheel


Function                    : Cuts straight or crimped lines through dough for pastry or pasta..
Material                     : Metal or stainless stell
How to Clean            : Wash with soap used sponge.

Pastry Blender


Function                 : to mix a hard (solid) fat into flour in order to make pastries. The tool is usually made of narrow metal strips or wires attached to a handle, and is used by pressing down on the items to be mixed (cutting in). It is also used to break these fats (shortening, butter, lard) into smaller pieces. There are several alternatives to using a pastry blender. One is to work the fat into the flour with the fingertips, though this requires having a good "touch" and knowing just how lightly to work the fat into the flour without melting it. Another is to use two table knives like a pair of scissors, one knife in each hand. A third is to use a food processor.

Pot Holder

Function                    : used to cover the hand when holding hot kitchen cooking equipment,     like pots and pans.

Measuring Cup


A measuring cup or measuring jug is a kitchen utensil used primarily to measure the volume of liquid or bulk solid cooking ingredients such as flour and sugar, especially for volumes from about 50 mL (2 fl oz) upwards. Measuring cups are also used to measure washing powder, liquid detergents and bleach for clothes washing. The cup will usually have a scale marked in cups and fractions of a cup, and often with fluid measure and weight of a selection of dry foodstuffs.

Measuring cups may be made of plastic, glass, or metal. Transparent (or translucent) cups can be read from an external scale; metal ones only from a dipstick or scale marked on the inside.

Wood Trivets


A trivet is an object placed between a serving dish or bowl, and a dining table, usually to protect the table from heat damage.
Trivet also refers to a tripod used to elevate pots from the coals of an open fire (the word trivet itself ultimately comes from Latin tripes meaning "tripod"). Metal trivets are often tripod-like structures with three legs to support the trivet horizontally in order to hold the dish or pot above the table surface. These are often included with modern non-electric pressure cookers. A trivet may often contain a receptacle for a candle that can be lit to keep food warm.
Modern trivets are made from metal, wood, ceramic, fabric, silicone or cork. When roasting any meat in an oven, trivet racks - which typically fit into roasting pans - are often used to enable the meat joint to be held above the direct heat of the roasting pan and allow the juices of the joint to drip into the roasting pan for the subsequent making of gravy. A trivet can also be made of freshly cut carrot, celery and onion. This not only raises the meat, i.e. chicken, it has the further advantage of providing a gravy-friendly liquid when the vegetables and juices are sieved at the end of cooking.

Lemon Squeezer

A lemon squeezer is a small kitchen utensil designed to extract juice from lemons or other citrus fruits such as oranges, grapefruit, or lime. It is designed to separate and crush the pulp of the fruit in a way that is easy to operate. Lemon squeezers can be made from any solid, acid-resistant material, such as plastic, glass, metal (usually aluminium) or ceramic.

Mandoline



Mandoline is a cooking utensil used for slicing and for cutting juliennes; with suitable attachments, it can make crinkle-cuts. A mandoline consists of two parallel working surfaces, one of which can be adjusted in height. A food item is slid along the adjustable surface until it reaches a blade mounted on the fixed surface, slicing it and letting it fall.
Other blades perpendicular to the main blade are often mounted so that the slice is cut into strips. The mandoline juliennes in several widths and thicknesses. It also makes slices, waffle cuts and crinkle cuts, and dices firm vegetables and fruits.
With a mandoline, slices are uniform in thickness, which is important with foods that are deep-fried or baked (e.g. potato chips), as well as for presentation. Slices can be very thin, and be made very quickly, with significantly less skill and effort than would be required if cutting with a knife or other blade.

DAILY REPORT ACTIVITY

Assalamualaikum WarahmatullahiWabarakatu
            Hello guys ... it doesn't feel well ... today is the last day of practice, this time not just this week. However, that's the real last practice in this semester. For the next semester there will be no more practice like this. Well ... we focus on learning theory which is nothing but the science of management itself and the preparation of the final assignment. I don't know what words and sentences I can write to describe how much we feel like this. Moment that will never come back even though we ask. A momentum that won't happen again, even though we want it.
This morning the activity went as usual. Me and my friends discussed briefly in class to determine the division of tasks in terms of being prepared to sell tomorrow. As usual selling activities on Fridays are routine activities carried out for anyone who practices in that week. Because, nobody wants to budge to go to buy pack for our food. so, I also volunteered to go to buy this. I immediately looked for a pack that was suitable for the food to be sold tomorrow. Besides that, Me and my friend went to the market to buy tofu. This tofu is also certainly one of the main ingredients of food that will be sold tomorrow.

 After that, when I came at the kitchen, I immediately prepared prepared unresolved things like cutting out the one I had just bought and so on. After this is finished. Opi and me made a sponge for the order tomorrow. Today we make filling and sponge, the next day we finish the cake.          

 After everything was resolved, we took a short break in the class. Then, we did general cleaning. Yes, this is our last general cleaning. The point today is the last day. Lastly, that doesn't mean we will also part ways after this. This is only the last practice. There are still six months a head of time for the last lecture before we all graduated. I have said this several times and I will not be bored to say "we will miss so bad". To commemorate this last moment. We all took photos together. Whether it's with ADH or with first semester children MTB.           


  THANK YOU VERY MUCH ... it has provided an amazing experience for all of us. For us this kitchen is the second home after each house. Luckily, there is this blog. I was able to reopen the story and experience that I wrote myself while in this kitchen. Although not from the beginning (1st semester). But, this blog can be said to be a diary-net that keeps all the stories that maybe even some that I have forgotten. This blog is also a physical proof of my struggle and other friends in studying.         
   A little flashback at the beginning of our practice, which was all still unknown, I did not understand it, and even some of them still don't know the example, personally. Since before I graduated from high school especially with a major in Natural Sciences, of course when I entered Culinary art it was something very new to me. However, I am grateful that I was given the opportunity and strength of the Almighty to be able to arrive on this day and of course it will continue until the last stage, That is graduation.        
There was no more shouting from a boss genk who was able to thrill the whole kitchen. when we are wrong, when we did something that is not appropriate or when we did something very slowly. We will miss it all. As for the problems we have experienced, all of them are spices to make us stronger and more resilient. I'm so greatiful for  bosss genk and all that is related to it that can't be mentioned one by one. Thank you very much for your guidance so far, who can make us like now and in the future will be even better ... hopefully.
Thank you, for all this time, you have been a good father and mother for all of us. Thank you for all the prayers offered to us. Until we can become what we are today. Although it is still a process and there are still many that need to be improved. However, at least we already have a change that was totally incomprehensible. Now we can understand. We know what you have command what you have said so far is for our good. Tasks and all things that sometimes make our minds a little depressed or heavy. A dizzy mind and the energy released to feel so tired. We believe that this is certainly something and the learning that is very good for us in the future. Hopefully  what we have always told us, we will always remember and carry out ....
The Last, I personally and all my friends apologize profusely for intentional or unintentional mistakes. About all the mistakes we have ever made. We are very, very sorry ...
  Sorry to make you confused, or even stressed when you face us who are sometimes difficult and somewhat mischievous. Sorry it's been very troublesome. Sorry for making you tired, draining you and your time just to take care and guide us all this time. We apologize profusely. And we are very greateful. Because of knowledge, experience and all this can never be invaluable by anything.

Assalamualaikum Warahmatullahi Wabarakatu..
Hello guys .. I don't get bored, keep on saying : D, don't ever get bored to stay tuned in my blog story which is so amazing and fun. I enjoyed this day by day so much that it didn't feel like I had reached the end of time where we would all finish learning here. Where tomorrow and so on there will be no more practice like this. Like what happened yesterday, today and tomorrow. There will be no more even though we want it. It feels sad today is the 3rd day in the last week we practiced in this beloved kitchen. Kitchen that has given us a lot of experience and learning. The place where we spend half our time is only in this kitchen. I feel very sad.
Return to today's story. Well.... in the morning I came to be greeted by a breakfast that during my life in the kitchen, this was the first time it happened. we had breakfast using instant noodles. This is very unusual in my opinion, the popularity of a boss genk like this. Buy us that much noodle and become our breakfast. So, gratefull to our boss genk. Usually we are starving this morning. Eh ... suddenly, today we start all activities with a full and full stomach. Alhamdulillah.
This morning there was no meaningful activity. Most men have special activities. That is teaching about how to make traditional barongko cakes and traditional food from the pinrang region. Thats a Nasu palekko  to PKK who are housed in the hotel d’Maleo. So what is left in class is only a little more than 10 people. Plus there were those who were absent because there were people who were sick, without information or permission. However, it certainly is not a barrier for us to continue our activities and do the best.

Today the activity is just selling. The menu that we market today is Ayam Geprek. Yes this is a mainstay menu from us. After breakfast we immediately prepared to sell this afternoon. We also divide the tasks well and can be resolved on time and the results of this sale are  good for today.


That too, me and Opi had ranggo to help in making a tarlet that he created. So, he made a tarlet with brown skin and of course chocolate taste. We help ranggo until the finishing process. Besides that, I also had meringue orders. So, we made the meringue and made it that same day. After, everything was finished, we immediately cleaned up and waited for directions from the boss genks to return to their homes.

Assalamualaikum Warahmatullahi Wabarakatu.....
Hello guys .. welcome to the story of my blog which will soon be over. Uhh so, sad ... this is the second day of practice in this week of our last practice in this semester and in the next semester we have no more practice. This means that all lecture activities will be focused in terms of more in depth about management and writing the final assignment. So, there is no practice as usual. There will be no more moments like this that we will always miss. Today me, opi, and made get a special assignment from the boss genk. This job is charger was in the Hospitality Administration (ADH) study program. I get a specially job to watched the pastry section. Menu today is doko-doko cangkuning and bubuh inji. The food was made yesterday and today only needs to be reheated so that the food can be fresh when served.
While reheating the food. I also guided them to did prepared dessert which will be served the next day. The menu are red velvet and bread butter pudding (BBP). I also gave a recipe and they immediately prepared to make it. I also gave a few examples and showed a little about tips on making cake so the results are not bad. I don't mean to say that I'm smart and perfect at making cakes. Ohh not at all. Because, the name of perfection is not there. However, it is only owned by the lord of god guys.

However, we ran out of red food coloring. So, alternatively we also make a black forest which of course only requires chocolate powder. I also told them how to roll the cake to look neat. They all learn well and fast. Listen to what I tell them. I also helped them in the division of tasks, there were those who made sponges for cake, some made filling them, and some made BBP. Because, what if this job is divided equally and each has its own responsibilities. so that, the work will certainly be easily resolved and organized.
After everything is finished. I also directed them to immediately did general cleaning and than, we are can back to our home.

Assalamualaikum warahmatullahi wabarakatu..
Hy guys ... welcome back to the story of my blog in the severals time. I feeling just yesterday I wrote my first blog story. However, not felt today that I wrote is the story of the last week blog.  honestly i don't know what I have to tell. There are not many activities today. In the morning when I came at the kitchen. We are unemployed for a long time or you could say there is no work at all. We don't know what to do. We also don't know the next learning material. Until almost towards noon. Only then did we get a clear direction about what will be done today.
Today we are only given direction to make a food which is then sell of or marketed today. Besides that, there is no more. We also immediately divided the task to do the product today. However, due to coincidence today there is a cake order that must be fulfilled because, today the cutomer wants to take the cake. So, we decided to divide the tasks and of course along with the results. Me  and Opi focus on making cake orders today and of course the results of these orders will go to today's class money, this week's product income. So, when the others are working on what foods are for sale today. I and opi instead worked on the cake.


After working on the cake, we are all in the same class doing a routine that we have never been able to leave and indeed because we are direct orders from the  boss genk. This is eating together or  we usually call the nation's children. After that, we did general cleaning and get ready to go home.

Assalamualaikum WarahmatullahiWabarakatu
            Hello guys..... tidak terasa yahh.. hari ini adalah hari terakhir praktek, kali ini bukan hanya pada minggu ini. Namun, thats a real the last practice in this semester. Untuk semester berikutnya tidak akan ada lagi praktek seperti ini. Yahh... kami fokus pada pembelajaran teori yang tidak lain adalah ilmu manajemen itu sendiri serta penyusunan tugas akhir. Saya tidak tau kata apa dan kalimat apa yang bisa saya tuliskan untuk menggambarkan tentang betapa kami merasa kehilangan memont seperti ini. Moment yang tidak akan pernah kembali datang meskipun kami meminta. Moment yang tidak akan terulang lagi, meski kami menginginkan itu.
            Pagi ini aktivitas berjalan seperti biasanya. Saya dan teman-teman berdiskusi sebentar di kelas untuk menentukan pembagian tugas dalam hal prepared untuk jualan besok. Seperti biasa kegiatan selling di hari jumat adalah kegiatan rutin yang dilakukan bagi siapa saja yang melakukan praktek di minggu tersebut. Berhubung karena, tidak ada yang ingin mengalah untuk go to buy pack for our food. so, saya pun mengajukan diri untuk go to buy this. Saya pun segera mencari pack yang sesuai dengan makanan yang akan dijual besok. Selain itu, saya bersama teman saya sempat ke pasar untuk membeli tahu. Tahu ini juga tentunya merupakan salah satu bahan utama makanan yang akan di jual esok hari.

            Setelah itu, sesampainya di kitchen saya pun segera membantu prepared yang belum terselesaikan seperti memotong tahu yang baru saja saya beli tadi dan lain sebagainya.   Setelah hal tersebut selesai. Saya dan opi membuat sponge persipan untuk orderan esok hari. Hari ini kami membuat filling dan sponge, keesokan harinya barulah kami finishing cake tersebut.
            Setelah semuanya terselesaikan, kami pun istirahat sebentar di dalam kelas. Lalu, kami melakukan general cleaning. Ya, ini adalah general cleaning terakhir kami. Intinya hari ini adalah hari serba terakhir. Terakhir, bukan berarti kami juga akan berpisah setelah ini. Ini cuman terakhir praktek. Masih ada enam bulan kedepan untuk waktu perkuliahan terakhir sebelum kami semua wisuda. Sudah beberapa kali saya mengatakan ini dan saya tidak akan bosan untuk mengatakannya “ we will miss so bad”. Untuk mengenang akan moment terakhir ini. Kami semua pun foto bersama. Baik itu bersama ADH maupun bersama anak semester 1 MTB.


            TERIMKASIH...... sudah memberikan pengalaman yang luar biasa bagi kami semua. Bagi kami kitchen ini adalah rumah kedua setelah rumah masing-masing. Untung saja ada blog ini. Saya jadi bisa membuka kembali cerita dan pengalam yang saya tulis sendiri selama berada di kitchen ini. Walaupun tidak sejak awal (semester 1). Tapi, blog ini bisa dikatakan diary-net yang menyimpan semua kisah yang bahkan mungkin ada beberapa yang sudah saya lupa. Blog ini juga merupakan sebuah bukti fisik tentang perjuangan saya dan teman-teman yang lain dalam menuntut ilmu.
            Sedikit flashback pada awal kami praktek yang tadinya semua masih belum tau apa-apa, belum paham tentang ini itu, dan bahkan ada yang masih sama sekali belum tau contohnya saya pribadi. Berhubung sebelumnya saya lulusan SMA apalagi dengan jurusan IPA tentu pada saat masuk di Culinary art ini itu merupakan sesuatu yang sangat baru bagi saya. Namun, saya bersyukur saya diberi kesempatan serta kekuatan oleh yang Maha kuasa untuk bisa sampai hingga pada hari ini dan tentunya akan dilanjutkan hingga pada tahap terakhir yakni, wisuda.
            Tak ada lagi suara teriakan ataupun bentakan dari boss genk yang mampu menggetarkan seisi dapur ini. ketika kami ada salah, ketika kami mengerjakan sesuatu yang tak sesuai ataupun ketika kami mengerjakaan sesuatu dengan sangat lamban. Semua itu akan sangat kami rindukan. Adapun masalah-masalah yang pernah kami alami itu semua adalah bumbu untuk membuat kami bisa menjadi lebih kuat dan tahan banting. Im so greatifull for boss genk dan semua yang terkait didalamnya yang tak bisa disebutkan satu persatu. Terimakasih banyak atas bimbingan kalian selama ini, yang bisa membuat kami seperti sekarang ini dan kedepannya akan menjadi lebih baik lagi.. semoga.
            Terimakasih, selama ini sudah menjadi ayah dan ibu yang baik bagi kami semua. Terimakasih untuk semua doa yang dipanjatkan untuk kami. Hingga kami bisa menjadi seperti yang sekarang ini. Walaupun masih proses dan masih banyak yang perlu diperbaiki. Namun, setidaknya kami sudah memiliki perubahan yang tadinya sama sekali tidak paham. Sekarang kami bisa paham. Kami tau apa yang kalian perintahkan, apa yang kalian sampaikan selama ini bertujuan untuk kebaikan kami. Tugas dan semua hal yang terkadang membuat batin kami agak tertekan ataupun merasa berat. Pikiran yang pusing serta tenaga yang dikeluarkan hingga merasa begitu lelah. Kami yakin, hal itu tentunya merupakan sesuatu hal serta pembelajaran yang bertujuan sangat baik untuk kami dimasa yang akan datang. Semoga apa yang selama ini disampaikan kepada kami, akan selalu kami ingat dan laksanakan..
            The last, saya pribadi dan semua teman-teman meminta maaf yang sebesar-besarnya atas kesalah yang disengaja ataupun tidak disengaja. Tentang semua khilaf yang pernah kami lakukan. Kami sangat-sangat minta maaf...
            Maaf sudah membuat bapak dan ibu pusing, atau bahkan stress ketika menghadapi kami yang terkadang susah di atur dan agak nakal ini. Maaf sudah sangat merepotkan. Maaf sudah membuat kalian lelah, menguras tenaga dan waktu kalian hanya untuk mengurus dan membimbing kami selama ini. Kami mohon maaf yang sebesar-besarnya. Dan kami sangat berterimakasih. Karena ilmu, pengalaman dan semua ini tak akan pernah bisa ternilai oleh apapun.

                Assalamualaikum Warahmatullahi Wabarakatu..
Hello guys.. tidak bosan-bosannya ku kan terus menyapa :D jangan pernah bosan untuk stay tune di cerita blog saya ini yang begitu luar biasa dan menyenangnkan. Aku begitu menikmati hari demi hari ini yang telah berlalu dan tidak terasa sudah sampai di penghujung waktu dimana kami semua akan menyelesaikan pembelajaran disini. Dimana esok dan seterusnya tak akan ada lagi praktek yang seperti ini. Seperti apa yang terjadi kemarin, hari ini dan esok. Tak akan ada lagi walaupun kami meminta. Sedih rasanya hari ini adalah hari ke-3 di minggu terakhir kami praktek di kitchen tercinta ini. Kitchen yang telah memberikan kami banyak pengalaman serta pembelajaran. Tempat dimana kami menghabiskan setengah waktu kami hanya di kitchen ini. I feel very so sad L
Kembali ke cerita hari ini. Well.. di pagi hari saya datang disambut oleh sarapan yang selama saya hidup di kitchen, ini pertama kalinya terjadi. Yakni, kami sarapan dengan menggunakan mie instant. Hal ini sangat tidak biasa menurutku, tumben sekali boss genk seperti ini. Membelikan kami mie sebanyak itu dan menjadi sarapan kami. So, gratefull to our boss genk. Biasanya kami di pagi hari ini kelaparan. Eh.. suddenly, today kami memulai segala aktivitas dengan perut yang terisi dan kenyang. Alhamdulillah. J
Pagi ini tidak ada kegiatan ynag begitu berarti. Sebagian besar para lelaki memiliki kegiatan khusus. Yakni, mengajar tentang cara membuat kue tradisional barongko dan makanan khas daerah pinrang palekko kepada ibu-ibu PKK yang bertempat di hotel d’Maleo. Sehingga yang tersisa dikelas hanyalah sedikit tidak lebih dari 10 orang. Ditambah lagi ada yang tidak hadir dikarenakan ada yang sakit, tanpa keterangan maupun izin. Namun, itu semua tentu bukanlah penghalang bagi kami untuk meneruskan kegiatan and do the best.


Hari ini kegiatan hanyalah berjualan. Adapun menu yang kami pasarkan hari ini adalah ayam geprek. Yaehh this a menu andalan dari kami. Setelah sarapan kami segera melakukan prepared untuk jualan siang ini. Kami pun membagi tugas dengan baik dan beryukur bisa terselesaikan tepat waktu dan hasil dari jualan ini pun lumayan untuk hari ini.


Tadi juga. Saya dan opi sempat membantu ranggo dalam pembuatan tarlet yang ia kreasikan. Jadi, dia membuat sebuah tarlet dengan kulit yang berwarna cokelat dan tentunya rasanya pun cokelat. Kami membantu ranggo hingga pada proses finishing. Selain itu tadi juga sempat ada orderan meringue sehingga kami membuat meringue tersebut dan dijadikan pula pada hari itu juga. Setelah, semua selesai kami pun segera mebersihkan dan menunggu arahan dari boss genk untuk pulang ke rumah masing-masing.
